Fresh and light, these delightful tropical cookies make an ideal hostess gift, potluck contribution or afternoon snack. The fresh lime adds fresh, bright flavor!
Ingredients:
1¼ c. granulated sugar
½ c. brown sugar
½ c. unsalted butter, softened
1 tsp. vanilla extract
1 large egg
1¾ cups) all-purpose flour
1 tsp. baking soda
¼ tsp. salt
¾ c. shredded coconut
2 Tbsp. fresh lime juice
1 Tbsp. grated lime rind
¼ c. chopped macadamia nuts
Directions:
- Preheat oven to 350°F. Combine granulated sugar, brown sugar, butter, and vanilla in a large bowl; beat with a mixer at medium speed until fluffy. Add egg; beat just until blended. Beat in flour, baking soda, and salt.
- Lightly toast coconut on a parchment paper-lined baking sheet in preheated oven. Beat lime juice and lime rind into dough at medium speed. Stir in toasted coconut and chopped macadamia nuts. Drop dough by tablespoonfuls 2 inches apart on parchment paper-lined baking sheets. Bake 10 to 12 minutes or until lightly browned.
